Description

A delicious and visually stunning Vanilla Berry Layer Cake, perfect for any celebration.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  7. Divide the batter evenly among the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Whip the heavy cream with powdered sugar until soft peaks form.
  11. Once the cakes are cool, layer them with whipped cream and mixed berries in between each layer.
  12. Frost the top and sides of the cake with the remaining whipped cream and decorate with additional berries.

Notes

  • For a richer flavor, use vanilla bean paste instead of extract.
  • Ensure the cakes are completely cool before frosting to prevent melting.
  • This cake can be made a day in advance and stored in the refrigerator.
