A delicious and visually stunning Vanilla Berry Layer Cake, perfect for any celebration.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 ½ tsp baking powder
- 1 tsp vanilla extract
- ½ tsp salt
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 2 tbsp powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
- Divide the batter evenly among the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Once the cakes are cool, layer them with whipped cream and mixed berries in between each layer.
- Frost the top and sides of the cake with the remaining whipped cream and decorate with additional berries.
Notes
- For a richer flavor, use vanilla bean paste instead of extract.
- Ensure the cakes are completely cool before frosting to prevent melting.
- This cake can be made a day in advance and stored in the refrigerator.
