Description

A quick and delicious one-pan meal featuring seasoned beef, rice, and vibrant Mexican flavors.


Ingredients

  • 1 lb ground beef
  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Drain excess fat and stir in the taco seasoning.
  3. Add the rice, black beans, diced tomatoes, beef broth, and corn to the skillet.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  5. Stir in the shredded cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro before serving.
