- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 packet taco seasoning
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Drain excess fat and stir in the taco seasoning.
- Add the rice, black beans, diced tomatoes, beef broth, and corn to the skillet.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
- Stir in the shredded cheese until melted and combined.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
