Spaghetti Squash Lasagna Cups are a healthy and delicious alternative to traditional lasagna, featuring roasted spaghetti squash filled with layers of cheese, marinara sauce, and ground meat.

- 1 medium spaghetti squash
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 pound ground turkey or beef
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- While the squash is roasting, cook the ground turkey or beef in a skillet over medium heat until browned. Season with Italian seasoning, salt, and pepper.
- Once the squash is cooked, use a fork to scrape out the strands into a bowl.
- Mix the spaghetti squash strands with ricotta cheese and half of the marinara sauce.
- In a muffin tin, layer the spaghetti squash mixture, ground meat, and mozzarella cheese, repeating the layers until the cups are filled.
- Top with the remaining marinara sauce and mozzarella cheese.
- Bake for an additional 15-20 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
Notes
- Feel free to customize the filling with your favorite vegetables.
- These cups can be made ahead of time and reheated.
- For a vegetarian option, omit the meat and add more vegetables.
