Description

Spaghetti Squash Lasagna Cups are a healthy and delicious alternative to traditional lasagna, featuring roasted spaghetti squash filled with layers of cheese, marinara sauce, and ground meat.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 pound ground turkey or beef
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  4. While the squash is roasting, cook the ground turkey or beef in a skillet over medium heat until browned. Season with Italian seasoning, salt, and pepper.
  5. Once the squash is cooked, use a fork to scrape out the strands into a bowl.
  6. Mix the spaghetti squash strands with ricotta cheese and half of the marinara sauce.
  7. In a muffin tin, layer the spaghetti squash mixture, ground meat, and mozzarella cheese, repeating the layers until the cups are filled.
  8. Top with the remaining marinara sauce and mozzarella cheese.
  9. Bake for an additional 15-20 minutes until the cheese is melted and bubbly.
  10. Garnish with fresh basil before serving.

  • Feel free to customize the filling with your favorite vegetables.
  • These cups can be made ahead of time and reheated.
  • For a vegetarian option, omit the meat and add more vegetables.
