A delicious and hearty breakfast casserole made with sausage, eggs, cream cheese, and hashbrowns, perfect for feeding a crowd.
Ingredients

- 1 pound sausage
- 6 large eggs
- 8 ounces cream cheese
- 1 bag (30 ounces) frozen hashbrowns
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned.
- In a large bowl, mix together the cooked sausage, hashbrowns, cream cheese, milk, and half of the cheddar cheese.
- Spread the mixture into a greased 9×13 inch baking dish.
- In another bowl, whisk the eggs and season with salt and pepper, then pour over the hashbrown mixture.
- Top with the remaining cheddar cheese.
- Bake for 45-50 minutes or until the eggs are set and the top is golden brown.
- Let cool for a few minutes before serving.
Notes
- Can be prepared ahead of time and stored in the refrigerator overnight.
- Feel free to add vegetables like bell peppers or onions for extra flavor.
- Leftovers can be stored in the fridge for up to 3 days.
