- 1 medium butternut squash, peeled and cubed
- 1 cup fresh cranberries
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cubed butternut squash with olive oil, honey, salt, pepper, and thyme.
- Spread the squash on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown.
- In the last 5 minutes of roasting, add the cranberries to the baking sheet.
- Remove from the oven and sprinkle with crumbled feta cheese before serving.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add nuts for extra crunch.
