Delicious and creamy pumpkin cheesecake bars with a graham cracker crust, perfect for fall.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
- Pour the pumpkin mixture over the crust in the baking dish.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
Notes
- For a spicier flavor, add more cinnamon or a pinch of cloves.
- These bars can be made a day in advance for better flavor.
- Serve with whipped cream for added richness.
