Description

Delicious tacos filled with grilled chicken and fresh pineapple, topped with cilantro and lime for a tropical twist.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Taco shells (soft corn tortillas or crunchy shells)
  • 1/2 cup chopped cilantro
  • Lime wedges

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, garlic powder, chili powder, salt, and pepper.
  3. Coat chicken breasts with the spice mixture.
  4. Grill chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
  5. Remove from the grill and let the chicken rest for a few minutes before slicing into strips.
  6. In the same bowl, toss diced pineapple with any remaining spice mixture.
  7. Assemble tacos by placing grilled chicken slices in shells, topping with pineapple and cilantro.
  8. Squeeze lime juice over the tacos before serving.

Notes

Marinate the chicken a few hours in advance for deeper flavors. Customize with toppings like avocado or spicy salsa.
