- 2 chicken breasts, boneless and skinless
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Taco shells (soft corn tortillas or crunchy shells)
- 1/2 cup chopped cilantro
- Lime wedges
Instructions
- Preheat your grill to medium-high heat.
- In a mixing bowl, combine olive oil, garlic powder, chili powder, salt, and pepper.
- Coat chicken breasts with the spice mixture.
- Grill chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
- Remove from the grill and let the chicken rest for a few minutes before slicing into strips.
- In the same bowl, toss diced pineapple with any remaining spice mixture.
- Assemble tacos by placing grilled chicken slices in shells, topping with pineapple and cilantro.
- Squeeze lime juice over the tacos before serving.
Notes
