Description

A quick and easy one-pan meal featuring healthy ground beef and pasta, perfect for busy weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 8 oz whole wheat pasta
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, beef broth, and Italian seasoning.
  4. Add the whole wheat pasta and bring to a boil.
  5. Reduce heat and simmer for about 10-12 minutes, or until the pasta is cooked al dente.
  6. Stir in the chopped spinach and cook until wilted.
  7. Remove from heat and sprinkle with Parmesan cheese before serving.

Notes

  • Feel free to add other vegetables like bell peppers or zucchini.
  • For a spicier dish, add red pepper flakes.
