Description

Mini Cherry Cheesecakes are delicious bite-sized desserts that combine a creamy cheesecake filling with a sweet cherry topping, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 can cherry pie filling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini muffin tins to form the crust.
  4. In another bowl, beat cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cheesecake mixture over the crusts in the muffin tins.
  7. Bake for 20-25 minutes or until set.
  8. Let cool, then top with cherry pie filling before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These can be made a day in advance and stored in the refrigerator.
