			- 4 salmon fillets
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled

- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together spinach, feta cheese, sun-dried tomatoes, black olives, garlic, olive oil, lemon juice, salt, and pepper.
- Make a pocket in each salmon fillet and stuff with the mixture.
- Place the stuffed salmon on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the salmon is cooked through.
