Description

A vibrant Mediterranean-inspired bowl filled with marinated sirloin steak, fresh vegetables, and creamy tzatziki, perfect for a healthy and flavorful meal.


Ingredients

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • ½ tsp dried oregano (for vinaigrette)

Instructions

  1. Marinate the Steak: Mix together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the steak and coat well. Marinate for at least 30 minutes, up to 4 hours.
  2. Prepare Tzatziki: In a bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill. Season with salt and pepper, then chill.
  3. Make Vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper until smooth.
  4. Sear the Steak: Heat a skillet over medium-high heat. Sear the steak for 4-5 minutes per side until browned and cooked to your liking. Let it rest before slicing thinly against the grain.
  5. Assemble the Bowl: Layer cooked grains in a bowl, top with sliced steak, roasted chickpeas, cherry tomatoes, cucumber, onion, olives, and feta. Drizzle with tzatziki and vinaigrette.

Notes

Can use flank steak or chicken as alternatives. Customize with different grains and toppings based on preference.
