Mediterranean Quesadillas with Spinach Feta are a delicious and healthy twist on traditional quesadillas, packed with flavor and nutrients.
Ingredients

- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup black olives, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the chopped spinach and sauté until wilted.
- In a bowl, combine the sautéed spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, and black olives. Season with salt and pepper.
- Place a tortilla in the skillet and spread a portion of the filling on one half of the tortilla.
- Fold the tortilla over and cook until golden brown on both sides, about 3-4 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- These quesadillas can be made ahead of time and reheated in the oven.
- Serve with a side of tzatziki sauce for dipping.
