Description

Mediterranean Quesadillas with Spinach Feta are a delicious and healthy twist on traditional quesadillas, packed with flavor and nutrients.


Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup black olives, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the chopped spinach and sauté until wilted.
  3. In a bowl, combine the sautéed spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, and black olives. Season with salt and pepper.
  4. Place a tortilla in the skillet and spread a portion of the filling on one half of the tortilla.
  5. Fold the tortilla over and cook until golden brown on both sides, about 3-4 minutes per side.
  6. Repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • These quesadillas can be made ahead of time and reheated in the oven.
  • Serve with a side of tzatziki sauce for dipping.
