Description

Lime Mousse Cheesecake is a light and refreshing dessert that combines the tangy flavor of lime with the creamy texture of cheesecake, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • ½ cup fresh lime juice
  • 2 tablespoons lime zest
  • 1 teaspoon vanilla extract
  • 1 packet unflavored gelatin
  • 3 tablespoons cold water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  5. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  6. In a small bowl, dissolve the gelatin in cold water and let it sit for 5 minutes. Then, heat it gently until melted.
  7. Add the lime juice, lime zest, and vanilla extract to the cream cheese mixture, then stir in the melted gelatin.
  8. Pour the lime mousse mixture over the cooled crust and smooth the top.
  9. Refrigerate for at least 4 hours or until set.
  10. Serve chilled, garnished with lime slices or zest if desired.

Notes

  • For a stronger lime flavor, increase the amount of lime zest.
  • This cheesecake can be made a day in advance for convenience.
  • Store leftovers in the refrigerator for up to 3 days.
