- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- ½ cup fresh lime juice
- 2 tablespoons lime zest
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin
- 3 tablespoons cold water
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
- Bake the crust for 10 minutes, then let it cool.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- In a small bowl, dissolve the gelatin in cold water and let it sit for 5 minutes. Then, heat it gently until melted.
- Add the lime juice, lime zest, and vanilla extract to the cream cheese mixture, then stir in the melted gelatin.
- Pour the lime mousse mixture over the cooled crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Serve chilled, garnished with lime slices or zest if desired.
Notes
- For a stronger lime flavor, increase the amount of lime zest.
- This cheesecake can be made a day in advance for convenience.
- Store leftovers in the refrigerator for up to 3 days.
