Description

A delicious and healthy dish featuring layers of zucchini and ricotta cheese, topped with marinara sauce.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds.
  3. In a baking dish, layer half of the zucchini slices at the bottom.
  4. Spread half of the ricotta cheese over the zucchini.
  5. Pour half of the marinara sauce over the ricotta.
  6. Sprinkle half of the mozzarella cheese on top.
  7. Repeat the layers with the remaining zucchini, ricotta, marinara, and mozzarella.
  8. Top with grated Parmesan cheese and Italian seasoning.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • For a lower-carb option, you can substitute zucchini with eggplant.
  • Feel free to add other vegetables like spinach or bell peppers for extra flavor.
