- 2 medium zucchinis, sliced
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into thin rounds.
- In a baking dish, layer half of the zucchini slices at the bottom.
- Spread half of the ricotta cheese over the zucchini.
- Pour half of the marinara sauce over the ricotta.
- Sprinkle half of the mozzarella cheese on top.
- Repeat the layers with the remaining zucchini, ricotta, marinara, and mozzarella.
- Top with grated Parmesan cheese and Italian seasoning.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a lower-carb option, you can substitute zucchini with eggplant.
- Feel free to add other vegetables like spinach or bell peppers for extra flavor.
