Ingredients

- 1 cup of ricotta cheese

Instructions
- Wash and chop the wild spinach.
- In a bowl, mix the ricotta cheese, chopped spinach, egg, salt, and pepper.
- Gradually add the flour until a dough forms.
- Roll the dough into small balls and shape them into gnocchi.
- Boil water in a pot and cook the gnocchi until they float to the surface.
- Serve with grated Parmesan cheese on top.

- For a gluten-free version, substitute all-purpose flour with gluten-free flour.
