Ingredients

  • 2 cups of wild spinach
  • 1 cup of ricotta cheese
  • 1 cup of all-purpose flour
  • 1 egg
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Wash and chop the wild spinach.
  2. In a bowl, mix the ricotta cheese, chopped spinach, egg, salt, and pepper.
  3. Gradually add the flour until a dough forms.
  4. Roll the dough into small balls and shape them into gnocchi.
  5. Boil water in a pot and cook the gnocchi until they float to the surface.
  6. Serve with grated Parmesan cheese on top.

Notes

  • For a gluten-free version, substitute all-purpose flour with gluten-free flour.
