A spooky and fun dish perfect for Halloween, featuring meatballs shaped like eyeballs served in a rich, red sauce.

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jar (24 oz) marinara sauce
- 1 can (15 oz) black olives
- 1/2 cup mozzarella cheese, shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about the size of a golf ball.
- Place the meatballs on a baking sheet and bake for 20-25 minutes, or until cooked through.
- While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
- Once the meatballs are done, add them to the marinara sauce and let them simmer for 5 minutes.
- To create the eyeballs, cut the black olives in half and place one half on top of each meatball.
- Sprinkle shredded mozzarella cheese on top of the meatballs and serve hot.
Notes
- For a spicier version, add red pepper flakes to the meatball mixture.
- These meatballs can be made ahead of time and frozen for later use.
- Serve with pasta or on a sub roll for a complete meal.
