Description

A spooky and fun dish perfect for Halloween, featuring meatballs shaped like eyeballs served in a rich, red sauce.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar (24 oz) marinara sauce
  • 1 can (15 oz) black olives
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs, about the size of a golf ball.
  4. Place the meatballs on a baking sheet and bake for 20-25 minutes, or until cooked through.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  6. Once the meatballs are done, add them to the marinara sauce and let them simmer for 5 minutes.
  7. To create the eyeballs, cut the black olives in half and place one half on top of each meatball.
  8. Sprinkle shredded mozzarella cheese on top of the meatballs and serve hot.

Notes

  • For a spicier version, add red pepper flakes to the meatball mixture.
  • These meatballs can be made ahead of time and frozen for later use.
  • Serve with pasta or on a sub roll for a complete meal.
