Description

A vibrant bowl featuring tender chicken, sweet corn, and black beans, topped with creamy avocado and zesty lime.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup diced red onion
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional toppings: cheese, sour cream, or hot sauce

Instructions

  1. In a large mixing bowl, combine the cooked chicken, corn, rice or quinoa, black beans, diced tomatoes, red onion, and cilantro.
  2. Squeeze lime juice over the mixture, and sprinkle with salt and pepper. Toss everything together until evenly mixed.
  3. Serve in bowls, topped with diced avocado and any additional toppings you desire.

Notes

For make-ahead, prepare components ahead and mix in avocado and lime just before serving to keep them fresh. You can also use pre-cooked chicken for convenience.
