Ingredients

- 2 cups cooked chicken, shredded
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cooked rice or quinoa
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/2 cup diced red onion
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Optional toppings: cheese, sour cream, or hot sauce
Instructions
- In a large mixing bowl, combine the cooked chicken, corn, rice or quinoa, black beans, diced tomatoes, red onion, and cilantro.
- Squeeze lime juice over the mixture, and sprinkle with salt and pepper. Toss everything together until evenly mixed.
- Serve in bowls, topped with diced avocado and any additional toppings you desire.
Notes
For make-ahead, prepare components ahead and mix in avocado and lime just before serving to keep them fresh. You can also use pre-cooked chicken for convenience.
