- 3 ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- ¾ cup chocolate chips (optional)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F and grease a 9 x 5-inch loaf pan with butter or cooking spray.
- In a large bowl, mash the ripe bananas until mostly smooth with a few lumps left.
- Stir in melted butter, then add brown sugar, eggs, and vanilla extract until combined.
- Sprinkle baking soda and salt over the mixture, gently stirring them in.
- Add all-purpose flour, folding in carefully until just combined.
- If using, fold in chocolate chips or nuts evenly in the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For the best results, use very ripe bananas. The bread can be made ahead and tastes even better the next day.
