Description

A comforting and flavorful dish combining tender chicken, creamy tzatziki, and fluffy rice, perfect for busy weeknights.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (Diced Zucchini or Bell Pepper)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the rice under cold water until the water runs clear.
  3. Spread the rinsed rice evenly across the bottom of a prepared baking dish.
  4. Pour the chicken broth over the rice, ensuring it’s evenly distributed.
  5. In a small bowl, mix olive oil, salt, pepper, and paprika, then rub this mixture on the chicken breasts.
  6. Nestle the seasoned chicken breasts on top of the rice.
  7. Cover the dish tightly with foil and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. While the chicken is baking, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, oregano, and a pinch of salt to prepare the tzatziki.
  9. Once baked, let the dish rest for a few minutes before serving with tzatziki sauce.

Make-ahead tips: Prepare the tzatziki sauce up to 24 hours in advance. Customize with herbs or spices as desired.
