- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced Zucchini or Bell Pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the rice under cold water until the water runs clear.
- Spread the rinsed rice evenly across the bottom of a prepared baking dish.
- Pour the chicken broth over the rice, ensuring it’s evenly distributed.
- In a small bowl, mix olive oil, salt, pepper, and paprika, then rub this mixture on the chicken breasts.
- Nestle the seasoned chicken breasts on top of the rice.
- Cover the dish tightly with foil and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- While the chicken is baking, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, oregano, and a pinch of salt to prepare the tzatziki.
- Once baked, let the dish rest for a few minutes before serving with tzatziki sauce.
