- 4 chicken thighs
- 4 chicken drumsticks
- 1 cup buttermilk
- 1 cup breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, soak the chicken pieces in buttermilk for at least 1 hour.
- In another bowl, mix breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
- Remove chicken from buttermilk and coat each piece in the breadcrumb mixture.
- Place the coated chicken on a baking sheet lined with parchment paper.
- Spray the chicken lightly with cooking spray.
- Bake in the preheated oven for 35-40 minutes or until the chicken is golden brown and cooked through.
- Let it rest for a few minutes before serving.
Notes
- For extra crunch, double coat the chicken by dipping it back in buttermilk and then in breadcrumbs again.
- Feel free to add your favorite spices to the breadcrumb mixture for additional flavor.
- Serve with your choice of dipping sauce.
