Description

Ingredients

  • 8 oz pasta of choice
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add pumpkin puree, heavy cream, salt, pepper, and nutmeg to the skillet. Stir to combine.
  4. Simmer the sauce for about 5 minutes, stirring occasionally.
  5. Add the cooked pasta to the sauce and toss to coat.
  6. Stir in grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
