- 1 tablespoon cornstarch

Instructions
- In a saucepan, combine coconut milk, sugar, sweet chili sauce, lime juice, and salt over medium heat.
- Stir until the sugar dissolves and the mixture begins to simmer.
- In a small bowl, mix cornstarch and water to create a slurry.
- Slowly add the slurry to the saucepan, stirring constantly until the mixture thickens.
- Remove from heat and let it cool before transferring to a jar.
- Store in the refrigerator for up to two weeks.
Notes
- Adjust the sweetness by adding more or less sugar according to your taste.
- This jam pairs well with toast, pancakes, or as a glaze for meats.
- For a spicier version, add more sweet chili sauce.
