Description

A delicious and easy one-pan Mediterranean dish featuring baked feta and potatoes, perfect for a quick weeknight meal.


Ingredients

  • 4 medium potatoes, diced
  • 200g feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, toss the diced potatoes with olive oil, oregano, garlic powder, salt, and pepper.
  3. Place the feta cheese in the center of the potatoes.
  4. Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden.
